Eating Schedule For 1 Year Old

6 a.m.

1 cup milk flavoured either with drinking chocolate or Rose syrup.

8 a.m.

Egg and cereal or egg and toast with butter.Types of egg preparations to choose:

Soft boiled egg

Place the egg in a pan and add enough cold water to cover top atleast by 1 inch. Add a pinch of salt ,a little lime juice or vinegar (this will prevent white of the egg from boiling out if there happens to be a crack in the shell). Cover the pan and then bring the water to a boil. Remove from fire and let it stand covered for 2 minutes. Promptly cool the egg in cold water and then break open in a cup, sprinkle salt and pepper on top.

Poached egg

1 egg , ½ cup milk, 1 tsp butter.

Put the butter and milk together in a small bowl. When milk turns hot, put in egg and cook till the white turns firm.

Steamed egg

Grease a small bowl and break in the egg. Cover and place over hot water when the white turns firm , remove from fire.

Fried egg

Heat 2 tblsps butter and break in the egg, when white turns quite firm remove from fire.

Scrambled egg

1 egg, 1 tblsp milk, 1 tsp cream of milk, 1 tblsp butter.

Blend egg with milk, cream of milk and salt. Melt butter, put in egg and cook till the egg is cooked but is still soft and moist.

Baked egg

Take a greased bowl and break the egg in it, sprinkle salt and 1 tsp cream of milk over the egg. Bake till white has set. Either serve egg with hot buttered toast or with cereals. Here are a few cereals.

Rice kheer

  • 1 tblsp rice.
  • 1 cup milk.
  • 1-1/2 tblsps sugar.
  • A few drops rose essence.

Boil rice in half cup water. When the water dries, put in milk and sugar and cook till the kheer turns thick. Sprinkle essence on top and decorate with fresh or dried fruits.

Rice payasam

  • 1 tblsp broken rice.
  • 2 tblsps grated jaggery.
  • 1/2 cup thin milk of coconut.
  • 1 cup thick coconut milk.
  • A big pinch of ground cardamom and nutmeg.

Cook rice in thin milk till soft, add thick milk, jaggery and spices and cook till mixture turns thick like custard. Decorate with a few pieces of dry fruits.

Rice and dal paysam

  • 1 tblsp rice.
  • 1/2 tblsp moong dal.
  • 1/2 cup thin coconut milk.
  • 1 cup thick coconut milk.
  • 3 tblsps jaggery.
  • A big pinch each of nutmeg and jaiphal.

Fry both rice and dal in little ghee till they turn golden in colour. Add thin milk and when it turns dry, add thick milk and 3 tblsps grated jaggery and spices and cook till mixture turns thick like custard. Decorate with a few dry fruits.

Flour sheera

  • 1 tblsp wheat flour,
  • 1/2 cup water
  • 1 tblsps ground sugar.
  • 1 tblsp butter.
  • A pinch of cardamom and nutmeg.

Dissolve sugar in water. Heat 1 tblsp butter and fry the flour over a slow fire to a golden colour. Add water and a big pinch of cardamom and nutmeg and cook till thick like custard.

Suji halwa

  • 1 tblsp suji or semolina.
  • 1 tblsp ground sugar.
  • 1 cupmilk.
  • 1 tblsp butter.
  • Few fruits and nuts.

Fry suji in 1 tblsp butter lightly. Add sugar and milk and cook till it turns thick like custard. Serve decorated with few fruits or nuts.

10 a.m.

Raw vegetable or fruit juice. Raw vegetable juice is better than giving cooked vegetable, because vitamins have not been partly destroyed by heat, and minerals and vitamins have not been dissolved in cooking water.

The juices you can choose from are:­

Carrot juice is very rich in Vitamin A, B, C & B2 plus it has minerals, calcium, iron and iodine.

Spinach juice should be mixed in equal quantities of carrot juice. It is rich in Vitamin A, B & E besides containing fair amount of Iodine.

Parsley juice should also be mixed with equal quantity of carrot juice. It is a rich source of Vitamins A, B, C & Iron.

Tomato juice is a rich source of Vitamin A, B & C. It should be flavoured with a dash of lime juice and salt.

Beet juice should be mixed in a quantity of one-fourth cup with three-fourths cup of pineapple juice. It is rich in Vitamins A, B, C & minerals.

You can also give mixed juices. Here are some combinations which taste delicious.

  • Celery, carrots and tomatoes.
  • Celery, apples and a bit of parsley.
  • Lettuce, a bit of cabbage, celery, a small cucumber and a tomato.
  • Spinach, tomato, beet and carrot.

Season all juices with a dash of lime juice and salt for better taste.

12 noon

Soup and some protein rich food like fish, chicken or meat.

Recipes of soup

Vegetable soup

Half cup mixed vegetables like peas, carrots, potatoes, cabbage, french beans and celery. Cook vegetables in 2 cups water till very soft. Force the vegetables with broth through a strainer. Reheat and mix in 1 tblsp cream of milk. If you like you can put in a few pieces of fried bread.

Tomato soup

Half cup of vegetables like peas, carrots, potatoes, cabbage, celery and french beans, 2 medium tomatoes, 1 tblsp. cream. Cook the vegetables in 2 cups water till they turns soft. Force vegetables with broth through a strainer. Add a few pieces of boiled elbow macaroni and a little grated cheese.

Dal soup

  • 1 tblsp moong dal.
  • 3 tblsps minced mutton or kheema.
  • 1 tsp grated onion.
  • A small piece grated ginger.
  • A few dried mint leaves. Salt to taste.

Heat 1 tblsp butter and fry onion and ginger. Add minced mutton and salt and fry to a brown colour with a little sprinkling of water. Add dal, then put in 2 cups water and mint and cook till dal and the mince are both soft and the soup a little thick. Mix in lime juice.

Minstrone soup

  • 1 cup tomato juice.
  • 1/4 cup sliced vegetables like peas, carrot, french beans and potatoes.
  • 1 tblsp boiled raimah or red kidney beans.
  • A few e1bow macaroni.
  • 1 tsp grated cheese.
  • Salt to taste.

Heat 1 tblsp butter and fry the vegetables lightly. Add 1 cup water and boil vegetables till soft. Add juice of tomatoes, kidney beans and macaroni and boil for 2 more minutes. Sprinkle cheese on top.

Recipes of mutton, chicken and fish

Kheema

  • 1/4 cup minced mutton.
  • 1 small onion.
  • 1 small piece ginger.
  • 2 tblsps green peas.
  • Salt and pepper according to taste.

Heat 1 tblsp ghee and fry onions and ginger to a brown colour. Add mutton and fry to a red colour with a little sprinkling of water. Cover with hot water and cook till almost done, add peas and salt and continue cooking till mutton is very soft.

Pounded chicken

  • 1 breast of chicken.
  • Salt to taste.
  • 1 tsp butter.

Put the chicken, 1 tsp butter and salt in a vessel. Cover with hot water and cook till the chicken is soft. Remove from heat and separate meat from bones, put the meat inside the broth before serving.

Steamed fish

1 slice of fish. Rub both sides with salt, little pepper and lime juice. Grease a brown paper with butter and wrap the slice in it. Steam for 10 minutes on each side. Remove paper and flake fish.

Boiled fish

  • 1 slice of fish.
  • 1 piece of carrot.
  • A quarter of a small onion.
  • A few parsley leaves.
  • Salt.
  • Lime juice.

Combine carrot, onion, lime juice, salt, parsley and water in a pan. Cook for 10 minutes. Add fish, and cook till the fish is done. Bone and flake fish and serve with tomato ketchup.

Minced liver

Boil half liver till soft. Mince it and mix in 1 tblsp cream of milk and salt.

4 p.m.

Flavoured milk.

7 p.m.

A full meal dish and a dessert.

Full meal dishes

Vegetable cheese souffle

  • 1 tblsp each of butter and flour.
  • 1/4 cup milk
  • 1 egg.
  • 3 tsps grated cheese.
  • 1/4 cup mixed boiled vegetables like french beans, carrots, peas and potatoes.

Melt butter add flour and cook until smooth and thick. Beat egg yolk till thick and smooth. Add cooled sauce a little at a time. Mix in cheese and vegetables, salt and pepper, lastly fold in the stiffly beaten egg white. Put in a greased dish and bake in a preheated oven till puffed and golden.

Tomato pie

  • 1 cup broken bread.
  • 1 medium tomato sliced.
  • 1/2 cup grated cheese.
  • 1 egg.
  • 1/2 cup milk.
  • Salt and pepper to taste.

Place bread in a greased dish, arrange tomato over bread and cheese over the tomatoes. Beat together egg seasonings and milk, pour over the bread. Bake in a moderate preheated oven till puffy and golden.

Cheese sauce with potatoes and hamburger.

To prepare cheese sauce

  • 25 grams grated cheese.
  • 1/2 tblsp flour.
  • 1/4 cup milk.
  • A pinch of Pepper.
  • Salt to taste.

Melt 1 tblsp butter and add flour. When the mixture turns smooth add milk gradually. Cook till it turns slightly thick, add seasonings and cheese and cook for 2 more minutes.

To prepare potatoes

Take 1 medium potato boil and peel it. Cut into thin long fingers, sprinkle with salt and deep fry to a golden colour. Drain.

To prepare hamburger

Take boiled one-fourth cup minced mutton and mix in a little grated onion, ginger and a few corriander leaves. Add a little raw egg and mix to a smooth mixture. Form into a round cutlet dip in bread crumbs and shallow fry to a golden colour. Put potatoes and the cutlet in a dish, put on top a little ketchup and then cover with cheese sauce.

Date pilaf

  • 2 tblsps butter.
  • 1/4 cup rice.
  • 4 almonds, peeled and sliced.
  • 1 tblsp raisins.
  • 5 dates(chopped).
  • Salt to taste.

Melt butter, add rice and then enough water to stand 1 inch above the level of the rice. Add salt, bring to a boil, reduce heat and cook till the rice is tender and dry. Fry nuts and dates in 2 tblsps butter and spoon over the rice.

Paella

  • 1/4 cup rice.
  • 1 medium tomato.
  • 1 tblsp minced onion.
  • 1/4 tsp minced ginger.
  • 1/2 cup mixed vegetables like peas, carrots, cauliflower, french beans.
  • 1 boiled egg(sliced).
  • Salt, pepper to taste.
  • A pinch of turmeric powder.

Beat 1 tbsp butter and fry onion and ginger till soft. Add tomatoes and cook till they turn soft. Add all spices, salt and vegetables, mix well and then add the rice. Add enough water to stand 1 inch above the level of the rice. Bring to a boil, reduce heat and cook till the rice is tender and dry. Place egg in a decorative manner over paella and serve at once.

Desserts

Fruit custard

  • 1/2 cup hot milk.
  • 1 egg.
  • 1 tblsp sugar.
  • 1/4 cup sliced, drained and tinned peaches, strawberries or cherries.

Place all above ingredients except egg in a mixer switch on and mix for 1 minute. Add egg and run for another few seconds. Put into a greased dish, stand it in a pan of hot water and bake in a moderate oven.

Burnt sugar pudding

  • 1 cup milk.
  • 1 beaten egg.
  • 2 tblsp sugar.

Melt half tblsp sugar over low heat in a pie dish. When it turns golden. Mix together remaining ingredients and put over the burnt sugar. Cover with a grease proof paper and steam till firm.

Coconut custard

  • 1/2 cup ground coconut.
  • 1/2 cup milk.
  • 1 egg.
  • 2 tblsps sugar.
  • A few drops essence of your choice.

Put coconut into the milk and bring to a boil. Remove from fire and let it stand for half an hour. Then strain out the milk from the coconut and discard the pulp. Stir in the beaten egg and sugar. Put in a greased bowl and cover bowl with wax paper and place in a plate of water. Bake in a preheated moderate oven for 20 minutes.
